Transform your favourite camping noodles into this delicious, filling jaffle recipe.

Ingredients:

  • 1 packet noodles
  • 2 slices of bread
  • 1 egg
  • Grated cheese
  • Butter
  • Mayonnaise to taste

Method:

  1. On the BBQ grill, cook your instant noodles to your liking, and fry the egg until it’s just set.
  2. Add the noodles, egg, cheese and mayonnaise to buttered bread slices.
  3. Cook for 2-4 minutes until bread is golden brown.

Ingredients:

  • 2 slices of bread
  • Grated cheese
  • Butter
  • Vegemite

Method:

  1. Preheat your jaffle maker on the BBQ grill.

Method:

  1. Place bread slices buttered side down onto your preheated jaffle maker.
  2. Add the beans in an even layer, and top up with the ham and cheese.
  3. Cover the remaining bread slice and cook for 3-5 minutes until golden brown.

Jaffles go Mexican with this spicy camping recipe. Tip: Make the chilli ahead of time and assemble the bread slices at the campsite.

Ingredients:

  • 2 tablespoons chilli oil
  • 1 garlic clove, minced
  • ½ onion, minced
  • 500g minced beef
  • 1 packet fajita spice mix
  • 1 can of crushed tomatoes
  • 1 can of Mexican pinto beans, drained and rinsed
  • Salt to taste
  • Butter
  • Cheese slices
  • Bread slices

Method:

  1. Add oil, garlic and onion to a pan and cook for about 2 minutes.
  2. Brown, the beef, add the spice mix, salt, tomatoes and beans, stir and cook for about 10 minutes.
  3. Add the chilli mixture to buttered bread slices and cook for about 5 minutes. Serve warm.

  • 5 tablespoons fresh ricotta
  • 1½ tablespoons chopped white chocolate
  • 2 tablespoons frozen raspberries
  • Butter
  • 2 bread slices
  • Icing sugar to garnish

Method:

  1. Mix the ricotta and chocolate in a bowl, and add this to your buttered bread slices.
  2. Top with raspberries and cook for about 5 minutes until bread is golden brown.
  3. Dust with icing sugar to serve.

Break out your camping pantry for this vegetarian crowd pleaser!

Ingredients:

  • 1¼ cups eggplant, sliced into discs
  • 2 tablespoons extra virgin olive oil
  • Softened butter
  • 8 bread slices
  • 1 cup mozzarella, drained
  • 2½ tablespoons grated parmesan
  • 12 fresh basil leaves

For the tomato sauce:

  • 1 tablespoon extra-virgin olive oil
  • ½ onion, finely diced
  • 1 garlic clove, finely chopped
  • ¼ cup tomato puree
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste

Method:

  1. Caramelise the onion and garlic in oil to make the sauce, stirring until tender. Simmer the rosemary, tomato puree and seasoning, and set aside.
  2. Fry the eggplant slices until golden brown, about 4 to 6 minutes, and drain on a paper towel.
  3. Toss the eggplant in the tomato sauce and set aside.
  4. Add the eggplant-tomato sauce, cheese and torn basil leaves to buttered bread slices.
  5. Cook for 4 to 6 minutes until golden brown. Serve hot.
